The timbers would originally have weathered to a silver grey colour and I think the daub and wattle walls would have been painted a sort of terracotta colour (don't quote me on that though) The black and white timber cladding was a fashion in the victorian age.

The walls would have been lime washed, which would have protected the actual wall underneath from weather damage. Lime wash produces a glow from the sparkling crystals in it, but by itself it's rather transparent, so they would generally add chalk to it to make it white. I read that sometimes they'd even paint the timbers with it, resulting in a gleaming white building.
