With the bay area left you can have a lovely, deep hearth for the fireplace - plenty of room for cooking.

uh- oh.... gonna have to look for Primo hearths .... I have several of their picture frames and medallions that work great on ceilings. 

 

I love the idea of using the bay as the fireplace.... it's the perfect spot for it.
