And here it is, after the first day of demolition. No second floor on the left, and the proposed (though since changed) new second floor height on the right.

I'm happy with it.

But those walls are now an absolute mess of old glue, bits of luan, and paint. Any tips for dealing with them?

I would prime them and then wallpaper them with a thick card stock type of scrapbook paper that has a lot of pattern to it. It will cover any bumps and keep you from noticing them. :)
