Here is an idea of the ceiling height it what may be the "servant's quarters" ... it would be really easy to lift this roof height though (which I may do???)

Pfft... they're servants. Let them have the lower ceiling. ;) You're going to have so much fun with this build! And we'll enjoy every step along the way, of course!
